Regarding PCs, I'm not going to aim for anything in particular, I shall just roll and see what the Lords of Chaos (i.e., the dice gods) bestow upon me! Some attrition would not surprise (or dismay) me, so I intend to roll up three or four PCs. I'll probably post the results, here...because everyone loves hearing about someone else's character.

Filling out just one character sheet took me about 2 hours. Is it normal not to understand wtf AC adjustments on weapons mean?

Yeah. I'd say that's normal (regarding AC on weapons, not the 2 hour roll-up). I don't know what it means, so don't worry about it.
I rolled up and equipped my AD&D "barbarian" (i.e. fighter) for Tacojohn's Dark Tower game at NTRPGCon in less than 10 minutes. 2 hours seems a little much. If you're having trouble, I don't mind if you roll up at the table. I'm certain there will be plenty of help available to tell you what parts not to bother with.

If my friend John is around that weekend, would there be room for him? He's never been the boards because he's not into DMing, but I think he'd enjoy the camaraderie/dragons/booze.

If DungeonDork gets to bring his girlfriend, then for sure John can come. At least I know him. You guys realize this is happening in Hearne, TX, right? Somebody will need to be the designated drunk driver if you're heading back to Austin after the game.

Huzzah!
I just got off the phone with Ama's in Hearne. We're good to go for this Saturday 11:30 am to 6:30 pm.
As I read it so far, we have an expected attendance of:
austinjimm
Philotomy
DungeonDork (+ girlfriend)
CountingWizard (+ friend John)
That looks like 6 all together. Did I forget anyone?
I'd say we still have room for up to 4 more if anyone wants to jump in last minute.

For anyone wondering if it is really worth the drive to Hearne, just imagine how much fun you'll be having eating queso, fajitas, margaritas, and beer while you play with one of the most proficient and entertaining DMs in the hobby. Bring the family and have them go out to the Camp Hearne POW museum or Hearne Railroad Museum Depot while you play. There is also the Franklin Drive-Thru Safari and Animal Park, as well as the George Bush Presidential Museum in nearby College Station. Make a weekend of it. Your spouse and kids will love you for it.

I can't make this weekend. But thanks for mentioning local attractions. I might bring the clan down in the new bus for a railroad depot and a drive-thru safari park.
