Does anybody play that these also affect illusionists and druids? Does anyone not do so? Perhaps it is so stated in the PHB but I missed it.

I don't believe it says specifically anywhere. However, the frequent references to illusionists and druids as sub-classes seems to me to make be evident that the charts were intended to apply to illusionists and druids as well.

I interpret it that way.

IIRC the official PH errata in The Dragon specified that Wisdom Table II applies to Clerics and Druids. I don't think that addition/correction was necessary, for the reason RA states (and, likewise, don't extrapolate from it that Int Table II doesn't apply to Illusionists, Dex Table II doesn't apply to Assassins or Monks, etc.). The only thing I can think of is that they perhaps meant by specifying Druids being included was to specifically exclude Paladins, Rangers, and Bards. But if that was the intent, that's a pretty ass-backwards way of going about it.

I've got to think the wisdom table II isn't meant to apply to paladins. If so, paladins automatically start getting spell bonuses because they have a minimum wisdom of 13.
Does anyone out there apply these tables to rangers or paladins when they mature to spellcasting level?

I don't interpret the table to apply to fighter sub-classes.

Nope. No bonus spells. If you want to have lots of spells to throw around, play a dual classed fighter/cleric.

Check out page 25, SPELL USABLE BY CLASS AND LEVEL - RANGERS
the double asterisk notation indicates that rangers must check to see if they can learn their spells, just as a magic user must
So at least that table is applicable to rangers

That makes sense though - if a ranger didn't have to do that, they would be in some ways better at their low level spells than a M-U is.

I don't think the subclasses were designed with the attribute charts in mind. That said, I used to use them for all, and these days don't use them for druids, illusionists, rangers or bards with regards to spells
