In three area of the Dungeon Master's Guide there are charts to roll up what magic items a NPC of a given level has. What I would like to know if there something similar for the amount of gold pieces they would possess.

Hmm. 80% of XP comes from gold 20% from kills I suppose, minus 1% upkeep costs per month I suppose. So a 4th level fighter npc has acclated 8000xp. 6,400gp from gold lets take a year of upkeep so minus 640gp.
5,760gp minus the xp value of the magic items he posses. So lets say sword +2 (800xp) and shield +1 (250xp) and chainmail +2 (1200xp)
3,510gp. This could be invested in 10 men at arms.
-300gp per year
A war horse with barding -350gp
2,860gp in gold, gems, jewlery, or other portable items.
Or use the treasure for men in the MM, the lair of a bandit, buccaneer lair etc.

I typically have 1st level adventurer-type NPCs carrying 5-30 silver pieces, 2nd-3rd level NPCs carrying 3-18 gold pieces, and 4th+ level NPCs carrying 3-18 g.p., perhaps 2-12 p.p., and 1-3 gems (50 gpv for 4th-6th, 100 gpv for 7-9th, 500gpv for 10th+). These are all rules of thumb that I've never bothered to write down before now, but it's pretty standard. NPCs who are leaders of other men-types (bandits, nomads, etc.) will just have a portion of the group treasure.

Yeah. If the npc isn't in his "lair", he's probably carrying bupkiss. Just like any other creature.

Figure out what your weekly average income is for a farmer is (say 1 GP a week) and then based on that figure what reward he would take for such a risk (same goes for guys with some training, guys with their own weapons but no training etc.). Also, consider what the local conditions are (are people desperate, would the local lord get pissed off etc.)? I think whats reasonable is up to the DM, though the advice given above seems inline with the games base setting and assumptions (the value of the GP is pretty set with weapons costs and supplies so that should help).
